Stuff the Turkey, Not Yourself! A Healthy Recipe for Leftover Turkey
Okay…..I have a confession…..I’m just slightly, semi-obsessed with the Roasted Turkey sandwich from Five Loaves. What’s that you ask? Why only an amazing mouth-watering medley of roasted turkey sliced to perfection, herbed cream cheese spread, lettuce, tomatoes and cranberry sauce nestled betwixt two slices of multigrain bread………[cue the harps]
Who am I kidding? I am TOTALLY obsessed with the Roasted Turkey sandwich at Five Loaves.

Imagine my excitement when I discover a semi-copycat recipe that not only excites my taste buds BUT allows me to utilize the plethora of leftover turkey after Thanksgiving. Let’s be honest, there’s always a TON of turkey remaining and there’s only so many plain old turkey sandwiches you can make.
Why not try spicing things up a bit? I adore this recipe as it is wholesome yet low calorie, a mere 317 calories per serving. Say hello to your new best friend……..don’t worry, you can thank me later. Happy Thanksgiving!

Ingredients
- 4 slices whole wheat bread
- 4 teaspoons light mayonnaise (substitute cream cheese for a healthier option!)
- 4 teaspoons honey Dijon mustard
- 1 1/2 cups baby spinach leaves
- 12 ounces thinly sliced turkey
- 4 slices 1/3-less-fat Swiss cheese
- 4 teaspoons cranberry chutney or relish
Preparation
1. Preheat broiler (with oven rack in middle position).
2. On each slice of bread, spread 1 teaspoon mayonnaise or cream cheese and then spread 1 teaspoon of honey Dijon mustard.
3. Layer each slice with 1/4 of the baby spinach, 3 ounces of turkey, and a slice of Swiss cheese.
4. Place sandwiches on a baking sheet and put in the oven. Broil 2 minutes or until the cheese has melted.
5. Remove from heat; top each sandwich with a teaspoon of cranberry chutney or relish, and serve immediately

Sharmaine Roaden; Army wife, College of Charleston alumni, foreign language educator, and a part-time Martha Stewart in my home, my passion truly lies in all endeavors that involve education, children, the arts and leading a healthy lifestyle.
As an educator, I cannot begin to tell you how many times I greeted my students upon their morning arrival only to see them consuming cookies, chips or doughnuts. It has been my educational experience and passion for healthier snack options within schools that has fostered my partnering with ECO Vending to serve as a guest blog contributor. Together, I believe we can foster healthy vending habits throughout our nation by creating partnerships within the community.
